BBQ roasted chicken with carrots

For the family. My Sunday lunch. Served with guacamole or chopped horseradish.

Easy recipe

1.15 minutes


 4 to 5 servings

2 lbs chicken

C/n barbecue sauce

1 onion in julienne strips

taste dried or fresh rosemary

to taste pepper


2 medium carrots in julienne strips

Steps to follow

Clean the chicken, leaving the skin on. Cut it into pieces.

Heat the oven to 350 degrees Fahrenheit for 10 minutes.

Peel the carrots and cut them into julienne strips, set aside.

Add the BBQ sauce to the chicken that we have put in a baking tray and mix with your hands.

Place the onion and carrots in the tray and mix with the chicken, salt, rosemary and pepper.

Bake for 45 to 50 minutes at 350 degrees Fahrenheit if a juicy consistency is desired.

After the baking time we take out and serve with guacamole and chopped horseradish.

Green Pepian or Jocón

Typical Guatemalan food


2 green tomatoes

1 medium green bell bell pepper

3-4 large miltomatoes

2-3 bunches of green onion or scallion stems, tender


1 large güisquil

2 lb chicken or beef rib if desired. Can be vegetarian only

Tender green guicoyitos

to taste Salt and pepper

1 corn tortilla

Steps to ensure

Cook all the greens for the recipe together: the onion stalks, the green tomatoes, the miltomatoes and the green bell pepper.

Separately, cook the güisquil cut in pieces and the green guicoyitos (without recooking).

Cook the chicken or beef ribs and save the broth.

Remove the water from the greens and blend them all together adding the cilantro and the tortilla, use the water from the broth of the chicken or the cooked ribs.

In a saucepan, boil everything together for 10 minutes, chicken/ribs, vegetables and recado.
